Let them eat (banana) cake!
Clare from Spacefittingfurniture shares with Vale Life readers her mouth watering recipe for a banana cake to die for.
Banana Cake
6oz/ 175g butter
6oz/ 175g self raising flour
3oz /90g caster sugar
3oz/90g soft brown sugar
3 large eggs
2 ripe bananas
Choc chips (of your choice)
Sprinkling of demara sugar
Mix butter, flour, eggs and sugar until nice and soft, mush the bananas and add and then add choc chips as desired (75-100 g pack)
Line loaf tin, add mix , sprinkle demara sugar on top (makes top crunchy) and put in oven at 160 for fan oven for approx 35 -40 mins, then check. the middle should still come out slightly gooey from the bananas, but the sides when sticking knife in should come out virtually dry.
Leave to cool and dust with icing sugar. Best eaten straight away or can be warmed and served with icecream or custard.
